Responsibilities

  • Establishes departmental regulations and procedures in conformance with administrative policies.
  • Determines quality and quantity of food required, plans menus and controls food    costs; works closely with consultant dietician.
  • Maintains appropriate documentation in resident medical records; participates in care planning.
  • Selects, orients, and trains new employees in department; provides counseling to staff and institutes disciplinary measures as needed; completes performance evaluations on schedule.
  • Develops and directs cost control system; prepares and submits department budget to administrator.
  • Develops standards for organization and supervision of dietary services.
  • Makes frequent inspections of all work, storage and serving areas to determine that regulations governing dietetic activities are followed.
  • Recommends and/or institutes changes in policies or procedures to achieve optimum operation of dietary department. 
  • Maintains appropriate documentation in resident medical records; participates in resident care planning.
  • Maintains effective relationships with residents and families, medical staff and with all staff in facility.
  • Effectively delegates authority to department supervisor staff to ensure effective flow of materials and services
  • Attends professional meetings and conferences to keep abreast of current practices and trends in the field of dietetics and nutrition; provides dietary education and counseling for residents; presents dietary education program to dietary and other staff, as required.
  • Ensures safe work procedures are developed and followed, to include those relating to employee injuries, prevention, and infection control.
  • Ensures a Continuous Quality Control Improvement Program is in place and that appropriate follow-up occurs.

Qualifications

  • Meets State requirements for certification.
  • Must be a certified dietary manager.
  • Food services supervisory experience in the long term care setting is preferred.
